City Hosts Fats, Oils & Grease Workshop for Commercial Kitchens

The City of Columbia recently hosted a training session on managing fats, oils and grease in commercial kitchens. See Important Documents below for copies of the presentation materials and other documents that were discussed.

Managers and owner/operators of commercial kitchens were invited to attend. The training sessions focused on fats, oils and grease management to meet City sewer and stormwater regulations. Attendees learned about:

  • Recent changes to the City's fats, oils and grease regulations
  • Grease traps, grease interceptors and other grease capturing devices
  • Best management practices for handling fats, oils and grease in commercial kitchens

City regulatory staff was also on hand to answer questions about the City's fats, oils and grease inspection program and stormwater inspection program.
